Pork Siomai and Buttered Shrimp (Dampa Style)

PORK SIOMAI


INGREDIENTS:
1/2 kl ground pork
1/2 kl shrimp (small size usually used in saute)
1 small yam bean (native turnip) or singkamas
2 small size carrots
10 tablespoon of worcestershire sauce 
2 eggs
3 tablespoon sugar
1 tablespoon sesame oil
salt
pepper
molo wrapper (2 packs)
oil


PROCEDURE:
1. Cut the shrimp (according to your preference).  Set aside.
2. Mince the following: carrots and turnip.
3. Mix all the first 8 ingredients.
4. Salt and pepper to taste.
5. Individually wrap them on each Molo Wrapper. You can make approximately 80 pcs.
6. Boil water.
7. Brush the steamer with oil to avoid sticking.
8. When the water boils, steam the siomai 10 minutes.


Best served with fried chili-garlic (see photo below) in soy sauce and Philippine lime.


SERVING:  
Makes approximately 70 pcs.(or more) siomai

Buttered Shrimp (Dampa Style)


INGREDIENTS:
1 kl large shrimp
500 ml of Orange soda (e.g. ROYAL)
3 tablespoons of brown sugar
10 tablespoon of worcestershire sauce
onion sprouts (chopped)
6 tablespoons of honey
4 oz butter (salted)
hot sauce to taste
salt and pepper to taste


PROCEDURE:
1.  Wash the shrimp.
2.  Boil the shrimp in Soda for 10 minutes.
3.  Drain the shrimp.  Set aside the stock used in boiling.
4.  Melt butter in a pan (with little amount of oil).
5.  Saute garlic, then add the shrimp.
6.  Add worcestershire sauce, honey and sugar.
7.  Add the stock.
8.  Let it simmer for a few minutes until it boils then add onion sprouts.
9.  Salt and pepper to taste.
10.Add the hot sauce according to your preference.


SERVING:
Good for 5 to 6 persons.
